All kind of important celebration lunches or dinners have many course, always of complex taste.
They will always take time first because they celebrate something important, but also because our stomachs need time to absorb and enjoy all dishes with pleasure, without being tired and doing honor to the table.
Today, more and more often these meals, especially in family, are in a shortened version
But traditionally of the list of course has always been quite long.

The menu of a complete Christmas meal after an initial aperitif with appetizers could provide

  1. Starters
  2. First course
  3. Main course with side dishes
  4. Frozen fruits sweets or Sorbets
  5. Desserts
  6. Coffee and liquors



STARTERS may consist of many small dishes or just one, made by fish, vegetables or meat.
It 's an the meal opening course that is important as food and also as image effect .

A choise of Starter for the Christmas Dinner


The FIRST COURSE may be more or less simple and it may consist only of a simple and good consommé or accompanied by something special (like a mirepois of vegetables, tiny little pastries or sandwiches stuffed with liver pate or meat as Cappelletti: there large space for the imagination! ). To some country tradition it is very important as in Naples, where it is always spaghetti with clams that, on this occasion, become really difficult to find in stores and very expensif

The MAIN COURSE can be unique and often roast but may also consist of two different courses, of meat or of fish and after of meat. It’s quite popular to have roast stuffed turkey or other poultry, but, as I have shown, there are also dishes of pork and even sheep or goat.

The moment of FROZEN FRUITS SWEETS it’s a time for chatting among the guests who take the opportunity exchange their place around the table and get closer to those sitting far from their place or are friends or relatives not seen for a long time. These dishes have to be easy easy to digest, fresh and nice.

DESSERTS are very important because in many traditions there are special sweets for any special occasions . Each region, and sometimes each city has one, but in Italy today the more popular is the Panettone di Milano. But we should not to neglect many others very good.

Finally here's the CONCLUSION of the dinner.
Often it is expected to be left on the table a large basket of fruit which for the occasion should contain fruits of good luck, such as grapes, pomegranates end melons, depending on the region, and often some tropical fruits as pineapples, mango or papaia

After the meal, however, it is mandatory a cup of good coffee with, aside, some tray of cookies or chocolate pralines .
Instead of coffee, however , I recommend you to offer also some good and digestive herbal teas, such as ginger  and the lemon peel tea, that in Italy is commonly called a canarino because of its canary yellow color.
